There's something about the smell of cumin and paprika hitting a hot skillet that takes me straight to a sunny afternoon at a food market in Tel Aviv, watching vendors work their magic with chicken and spices. I came home determined to recreate that experience in my own kitchen, but I wanted something lighter—less pita, more greens, and a tahini sauce so silky it could make cardboard taste good. This salad bowl became my answer, and honestly, it's become my go-to when I want to feel like I'm eating something indulgent while actually being kind to my body.

I'll never forget the first time I served this to my sister, who'd just started trying to eat better but swore she'd miss her favorite shawarma wraps. She took one bite, closed her eyes, and said it tasted like the same meal but cleaner somehow. That's when I realized this wasn't about cutting corners or making sad healthy food—it was about understanding what makes a dish work and building it better.

Ingredients

  • Boneless, skinless chicken breasts or thighs: Thighs are more forgiving if you're new to this, but breasts work fine if sliced thin so they cook evenly and fast.
  • Ground cumin, coriander, and smoked paprika: These three are the heart of the flavor profile, so don't skip them or swap for cheap versions that have been sitting in your cabinet since 2019.
  • Turmeric and cinnamon: The warm spices that make people ask what you did differently, even though they can't quite name it.
  • Lemon juice and tahini: The lemon cuts through the richness of tahini like a small miracle, so use fresh lemon juice every time.
  • Mixed salad greens: Whatever is freshest at your market—I rotate between arugula, spinach, and romaine depending on the season and what looks best.
  • Fresh vegetables (cucumber, tomatoes, bell pepper, red onion, carrot): These aren't just garnish; they're what makes each bite feel alive and crunchy.
  • Kalamata olives and avocado: The olives add a briny saltiness that grounds the whole bowl, while avocado brings richness that keeps you satisfied without heaviness.

Instructions

Build your spice marinade:
Whisk together olive oil and all the dry spices with lemon juice in a bowl big enough for the chicken to move around. The spices will bloom as soon as they hit the oil, so your kitchen is going to smell incredible already.
Marinate the chicken:
Toss chicken slices in the spice mixture until every piece is coated, then let it sit while you do other tasks. Even 15 minutes makes a difference, but if you have time, let it hang out for up to 2 hours in the fridge.
Get your pan screaming hot:
A large skillet or grill pan over medium-high heat is what you need, and you'll know it's ready when a drop of water sizzles and disappears immediately. Don't crowd the pan or the chicken will steam instead of sear.
Cook the chicken to golden:
Place chicken slices in the hot pan and resist the urge to move them around obsessively. Let them sit for 5-6 minutes until the bottom is golden and caramelized, then flip and cook the other side for another 5-6 minutes until cooked through and the edges are crispy.
Rest and prepare tahini drizzle:
While chicken rests for 5 minutes, whisk tahini with lemon juice, water, olive oil, minced garlic, salt, cumin, and honey (if using) until it's silky and pourable. It should fall off your whisk in ribbons, not globs.
Assemble your bowls:
Divide greens among four bowls, then arrange cucumber, tomatoes, red onion, carrot, bell pepper, olives, and avocado in sections so every forkful has something interesting. Top with warm chicken slices and drizzle generously with tahini sauce.

There was this one evening when I made these bowls for a dinner party and my friend who usually orders takeout every night actually came back for seconds and asked if I could teach her how to make it. Watching someone discover that healthy food could taste this good felt like sharing a secret that mattered.

Why Marination Is Your Secret Weapon

The longer you marinate the chicken, the deeper the spices penetrate and the more flavorful each bite becomes. Even if you're pressed for time, those 15 minutes transform plain chicken into something that tastes like it's been slow-cooked all day. I learned this the hard way when I once skipped marination entirely and felt the difference immediately—the spices stayed mostly on the surface instead of throughout.

Making the Tahini Sauce Creamy

The magic of tahini sauce is in the balance between lemon juice and water—too much of either and it either becomes bitter or too thin. I always start with the recipe amount, taste it, and add water just a teaspoon at a time until it flows like a pourable cream that coats the back of a spoon. The garlic should be minced finely so it dissolves into the sauce rather than leaving sharp little bits that catch people off guard.

Customizing Your Bowls

The beauty of a bowl is that it's infinitely flexible—add quinoa or brown rice if you want more substance, swap vegetables based on what's in season, or use chickpeas instead of chicken if you're feeding vegetarians. I've also added fresh herbs like parsley or cilantro straight into the tahini sauce, which elevates everything with brightness. Here are some directions to take this foundation:

  • For extra heartiness, layer in cooked quinoa, farro, or brown rice before the vegetables.
  • Fresh herbs like parsley, cilantro, or mint mixed into the tahini sauce add brightness and complexity.
  • A sprinkle of pomegranate seeds or toasted pine nuts adds texture and makes the bowl feel more celebratory.

This bowl has become my answer when I want to feel energized and satisfied without feeling like I'm being virtuous about it. Every element is there because it tastes good and works together, not because it's trendy or good for Instagram.
